Eugenia is named after Eugenia Smith, an independent woman who learned about business from growing up in her father’s general store. It was Eugenia who decided to build a hotel in Ephraim. To build Eagle Inn, she and her husband, B.D., designed a first-class resort that was brought to life by the most talented builders and finest materials — it even had the honor of being the first hotel in Ephraim with indoor plumbing. By 1920, Eugenia managed a staff of 25 who helped her and B.D. operate a hotel of 30 rooms, 14 cottages, and a dining room that could seat 125 people.

Hilda is named after Olive Gunhild Larson Paschke, known and loved by everyone as ‘Hilda.’ Hilda spent time abroad in England as a governess where she learned the English tradition of afternoon tea service. When she returned to Ephraim, Hilda decided to combine her loves of people and baking by opening the Brookside Tea Garden along a trout stream at the south end of the village. The restaurant became the “in” place to be for guests of all walks of life. No matter how busy she was running the business, Hilda made a practice of visiting each guest at their table.
